  • 4 fillets salmon
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • salt to taste
  • pepper to taste
  • 1/4 cup fresh parsley (chopped)

Instructions

  1. In a medium saucepan, bring the vegetable broth to a boil and add the orzo. Cook according to package instructions.
  2. While the orzo is cooking, heat olive oil in a large skillet over medium-high heat.
  3. Season the salmon fillets with lemon zest, garlic, salt, and pepper.
  4. Place the salmon in the skillet skin-side down and sear for about 4-5 minutes on each side, or until cooked through.
  5. Drain the orzo and mix in the lemon juice and chopped parsley.
  6. Serve the seared salmon over the lemon orzo.
