  • 2 pounds chicken, cut into pieces
  • 2 tablespoons curry powder
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 onion, chopped
  • 2 green onions, chopped
  • 1 scotch bonnet pepper, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons vegetable oil
  • 4 cups water

Instructions

  1. In a large bowl, mix the chicken with curry powder, allspice, salt, black pepper, and garlic powder. Let it marinate for at least 30 minutes.
  2. Heat vegetable oil in a large pot over medium heat. Add onions, green onions, garlic, and ginger, sauté until softened.
  3. Add the marinated chicken to the pot, stirring to combine with the onions and spices.
  4. Add water and the scotch bonnet pepper. Bring to a simmer and cook covered for about 45 minutes until the chicken is tender.
