  • 1 pound boneless chicken breast
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 2 kaffir lime leaves
  • 1 bunch fresh cilantro
  • 1 lime, juiced
  • 2 cups mushrooms, sliced
  • 1 bell pepper, sliced
  • 1 cup snow peas
  • 2 green onions, chopped

Instructions

  1. In a large pot, combine chicken broth, coconut milk, and red curry paste. Bring to a simmer.
  2. Add the chicken breast and cook until tender, about 15 minutes.
  3. Remove chicken, shred it, and return it to the pot.
  4. Add fish sauce, kaffir lime leaves, mushrooms, bell pepper, and snow peas. Simmer for an additional 10 minutes.
  5. Stir in lime juice and cilantro before serving.
  6. Garnish with green onions.
