- 4 fillets salmon
- 2 tablespoons blackening seasoning
- 1 tablespoon olive oil
- 1 large mango, diced
- 1/4 red onion, minced
- 1/2 red bell pepper, diced
- 1 jalapeño, seeded and minced
- 2 tablespoons cilantro, chopped
- 1 tablespoon lime juice
- Salt and pepper to taste
- Heat olive oil in a skillet over medium-high heat.
- Coat each salmon fillet with blackening seasoning.
- Cook the salmon in the skillet for about 4-5 minutes on each side, until cooked through.
- In a bowl, combine mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, salt, and pepper.
- Top the blackened salmon with the mango salsa and serve immediately.
Notes
- For extra flavor, marinate the salmon in lime juice for 30 minutes before cooking.
