A delicious summer dish featuring blackened salmon topped with fresh mango salsa.

Ingredients

  • 4 fillets salmon
  • 2 tablespoons blackening seasoning
  • 1 tablespoon olive oil
  • 1 large mango, diced
  • 1/4 red onion, minced
  • 1/2 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 2 tablespoons cilantro, chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Coat each salmon fillet with blackening seasoning.
  3. Cook the salmon in the skillet for about 4-5 minutes on each side, until cooked through.
  4. In a bowl, combine mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, salt, and pepper.
  5. Top the blackened salmon with the mango salsa and serve immediately.

Notes

  • For extra flavor, marinate the salmon in lime juice for 30 minutes before cooking.
  • Feel free to adjust the spice level by adding more or less jalapeño.
