A creamy and hearty Cajun potato soup that incorporates turkey bacon for a flavorful twist.

Ingredients

  • 4 large potatoes
  • 1 cup diced turkey bacon
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy.
  3. Stir in the onion and garlic, cooking until softened.
  4. Add the potatoes, chicken broth, and Cajun seasoning. Bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Use a potato masher to mash some of the potatoes for a thicker consistency.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Serve hot, garnished with additional turkey bacon if desired.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to three days.
  • Add more or less Cajun seasoning depending on your heat preference.
