- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound carrots, peeled and chopped
- 1 tablespoon fresh ginger, grated
- 4 cups vegetable broth
- 1 teaspoon salt

- 1/2 cup coconut milk
