  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup brewed chai tea, cooled
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla and cooled chai tea.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill each cupcake liner about two-thirds full with batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
