  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the bananas and then mix in the butter, sugar, eggs, and vanilla.
  3. Add the baking soda and salt, then stir in the flour until just combined.
  4. In another bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
  5. Pour half of the banana batter into a greased loaf pan.
  6. Spoon the cream cheese mixture over the batter, then top with the remaining banana batter.
  7. Bake for 60-70 minutes, or until a toothpick comes out clean.
  8. Let cool before slicing.
