Instructions

  1. In a large pot, heat the chicken broth over medium heat.
  2. Add the chicken breast and cook until no longer pink, about 20 minutes.
  3. Remove the chicken, chop it, and return it to the pot.
  4. Add mixed vegetables, onion, garlic, thyme, salt, and pepper.
  5. Simmer for 15-20 minutes until vegetables are tender.
