  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup brewed espresso
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the softened butter and sugar to the mashed bananas and mix well.
  4. Stir in the eggs, vanilla extract, and brewed espresso until combined.
  5. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  6. Gradually combine the dry ingredients with the wet mixture until just mixed.
  7. Fold in the chocolate chips.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
