  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 can (14 ounces) coconut milk
  • 4 cups chicken broth
  • 2 cups mixed vegetables (carrots, bell peppers, peas)
  • 2 tablespoons lime juice
  • salt to taste
  • fresh cilantro for garnish

Instructions

  1. Heat the coconut oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the onion, garlic, and ginger, cooking until the onion is translucent.
  4. Add the curry powder and stir for another minute.
  5. Pour in the coconut milk and chicken broth, bringing it to a simmer.
  6. Add the mixed vegetables and cook until tender.
  7. Stir in lime juice and season with salt.
  8. Serve hot, garnished with fresh cilantro.
