  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 cup spinach, wilted
  • 1 tablespoon cilantro, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
  2. Add the garlic and ginger, cooking until fragrant.
  3. Stir in the red curry paste and cook for 1-2 minutes.
  4. Pour in the coconut milk and soy sauce, bringing the mixture to a simmer.
