A delicious twist on the classic Olive Garden soup, featuring turkey bacon for a healthier option.

Ingredients

  • 1 pound turkey bacon
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 4 large potatoes, diced
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté the onion and garlic until soft.
  3. Add chicken broth and potatoes, bring to a boil, then simmer until potatoes are tender.
