3 ripe bananas
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
8 ounces cream cheese, softened
1/4 cup powdered sugar
1 teaspoon lemon juice
Instructions
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a bowl, mash the bananas and set aside.
In another bowl, cream together the butter and sugar until light and fluffy.
Add eggs and vanilla extract, mixing well.
In a separate bowl, combine flour, baking soda, and salt; gradually add to the banana mixture.
In a small bowl, mix the cream cheese, powdered sugar, and lemon juice until smooth.
Pour half of the banana batter into the prepared loaf pan, spread the cream cheese mixture over it, then top with the remaining banana batter.
Bake for 60-70 minutes or until a toothpick comes out clean.
Allow to cool before slicing.
Notes
For best results, use overripe bananas.
