- 8 ounces fettuccine
- 1 tablespoon olive oil
- 1 pound asparagus, trimmed and cut into 2-inch pieces
- 1 cup fresh peas
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh mint leaves, chopped
- Salt and pepper to taste
- Cook the fettuccine according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add asparagus and cook until tender, about 5 minutes.
- Add garlic and peas, cooking for an additional 2 minutes.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese and mix until melted and smooth.
- Add the cooked pasta to the skillet, tossing to combine.
- Remove from heat and mix in the mint. Season with salt and pepper.
- Serve immediately, garnished with additional mint if desired.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
