  • 1 can (10 oz) red enchilada sauce
  • 4 cups chicken broth
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup corn
  • 1 diced onion
  • 2 cloves minced garlic
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the shredded chicken, corn, enchilada sauce, chicken broth, cumin, chili powder, salt, and pepper.
