Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup corn kernels
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • 1 lime, juiced

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chicken and cook until browned on both sides.
  2. Remove the chicken and set aside. In the same pot, add onion and garlic, and sauté until softened.
  3. Stir in cumin and chili powder, cooking for another minute.
  4. Add chicken broth, black beans, tomatoes, corn, and the reserved chicken.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes until chicken is cooked through.
  6. Remove chicken and shred it, then return to the pot.
  7. Stir in heavy cream, cheese, and cilantro, cooking until heated through.
  8. Season with salt and lime juice before serving.

Notes

  • For extra flavor, you can add jalapeños or additional spices.
  • Garnish with avocado and tortilla strips for added texture.
