- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (14.5 ounces) diced tomatoes
- 1 cup corn kernels
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped
- Salt to taste
- 1 lime, juiced
- Heat olive oil in a large pot over medium heat. Add the chicken and cook until browned on both sides.
- Remove the chicken and set aside. In the same pot, add onion and garlic, and sauté until softened.
- Stir in cumin and chili powder, cooking for another minute.
- Add chicken broth, black beans, tomatoes, corn, and the reserved chicken.
- Bring to a boil, then reduce heat and simmer for about 20 minutes until chicken is cooked through.
- Remove chicken and shred it, then return to the pot.
- Stir in heavy cream, cheese, and cilantro, cooking until heated through.
- Season with salt and lime juice before serving.
