  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can green enchilada sauce
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese, plus more for serving
  • 1 cup corn, frozen or canned
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, sautéing until the onion is translucent.
  3. Stir in the cooked chicken, chicken broth, and green enchilada sauce.
  4. Bring to a simmer and cook for 10 minutes.
  5. Stir in the heavy cream, cumin, chili powder, salt, and pepper.
  6. Cook for an additional 5 minutes.
  7. Add shredded cheese and corn, stirring until cheese is melted.
  8. Remove from heat and stir in the cilantro before serving.

Notes

  • For a spicier flavor, add diced jalapeños to the soup.
  • This soup can be made ahead of time and stored for later use.
