A delightful pasta dish featuring succulent shrimp in a rich and creamy sauce with Tuscan flavors.

Ingredients

  • 8 ounces linguine
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook linguine according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add shrimp and cook until pink, about 3-5 minutes. Remove shrimp from skillet and set aside.
  4. In the same skillet, add cherry tomatoes and cook until soft.
  5. Pour in heavy cream and bring to a simmer. Add Parmesan cheese, stirring until melted.
  6. Mix in spinach and cook until wilted.
  7. Return shrimp to the skillet and stir to combine. Season with Italian seasoning, salt, and pepper.
  8. Toss the cooked linguine in the sauce until well coated.
  9. Serve hot, garnished with additional Parmesan if desired.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • Can add red pepper flakes for a spicy kick.
