- 8 ounces linguine
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Cook linguine according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add shrimp and cook until pink, about 3-5 minutes. Remove shrimp from skillet and set aside.
- In the same skillet, add cherry tomatoes and cook until soft.
- Pour in heavy cream and bring to a simmer. Add Parmesan cheese, stirring until melted.
- Mix in spinach and cook until wilted.
- Return shrimp to the skillet and stir to combine. Season with Italian seasoning, salt, and pepper.
- Toss the cooked linguine in the sauce until well coated.
- Serve hot, garnished with additional Parmesan if desired.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- Can add red pepper flakes for a spicy kick.
