An easy and delicious crockpot recipe for busy nights featuring chicken and rice cooked to perfection.

Ingredients

  • 4 cups chicken broth
  • 2 cups white rice
  • 1 pound chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste
  • 1 cup frozen peas and carrots

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the chicken broth, white rice, garlic powder, onion powder, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-7 hours or until chicken is cooked through and rice is tender.
  5. In the last 30 minutes of cooking, add frozen peas and carrots.
  6. Once done, shred the chicken and mix everything together before serving.

Notes

  • For added flavor, you can sauté onions and garlic before adding to the crockpot.
  • Feel free to substitute chicken thighs for chicken breasts for a different flavor.
