- 2 pounds boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 onion chopped
- 3 cloves garlic minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup cooked pasta
- 2 tablespoons fresh basil
- Place chicken, broth, tomatoes, onion, garlic, Italian seasoning, salt, and pepper in the crockpot.
- Cook on low for 6-8 hours or high for 4-5 hours.
- Remove chicken, shred, and return to the pot.
- Add heavy cream and Parmesan cheese, stirring until combined.
- Add cooked pasta and fresh basil before serving.
Notes
- For a thicker soup, you can mix a tablespoon of cornstarch with a little water and add it at the end.
- Serve with crusty bread for a complete meal.
