A delicious and easy-to-make breakfast hash using turkey bacon and southwestern flavors.

Ingredients

  • 1 pound turkey bacon
  • 2 cups diced potatoes
  • 1 cup bell peppers
  • 1 cup onions
  • 4 eggs
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the turkey bacon in a skillet until crisp. Remove and chop into pieces.
  2. In the same skillet, sauté the onions and bell peppers until soft.
  3. Add the diced potatoes and seasonings to the skillet, cooking until potatoes are tender.
  4. Combine everything into the crockpot and crack the eggs on top.
  5. Cook on low for 6 hours or high for 3 hours until eggs are set.

Notes

  • For extra flavor, add cheese before serving.
  • Feel free to substitute vegetables to your liking.
