- 1 pound turkey bacon
- 2 cups diced potatoes
- 1 cup bell peppers
- 1 cup onions
- 4 eggs
- 1 teaspoon cumin
- 1 teaspoon paprika
- salt to taste
- pepper to taste
- Cook the turkey bacon in a skillet until crisp. Remove and chop into pieces.
- In the same skillet, sauté the onions and bell peppers until soft.
- Add the diced potatoes and seasonings to the skillet, cooking until potatoes are tender.
- Combine everything into the crockpot and crack the eggs on top.
- Cook on low for 6 hours or high for 3 hours until eggs are set.
