A delicious and easy breakfast option made in a crockpot with spinach, feta, and turkey bacon.

Ingredients

  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 4 eggs
  • 1/2 cup turkey bacon, chopped
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, whisk together the eggs and milk.
  2. Add in the chopped spinach, feta cheese, and turkey bacon.
  3. In another bowl, combine the flour, baking powder, salt, and pepper.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined.
  5. Pour the mixture into the crockpot and cook on low for 4 hours or until set.
  6. Allow to cool slightly before slicing into muffins.
