  • 1 pound boneless chicken thighs
  • 1 can coconut milk
  • 4 cups chicken broth
  • 2 cups sliced mushrooms
  • 1 cup chopped carrots
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 cup fresh cilantro, chopped
  • 2 green onions, sliced

Instructions

  1. In the crockpot, combine chicken, coconut milk, chicken broth, mushrooms, carrots, onion, garlic, ginger, red curry paste, and fish sauce.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  3. Before serving, stir in lime juice and cilantro.
  4. Garnish with green onions.
