  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup frozen peas
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (9 oz) cheese tortellini
  • 2 cups fresh spinach

Instructions

  1. In a skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until soft.
  2. Transfer the mixture to the crockpot.
  3. Add carrots, celery, diced tomatoes, vegetable broth, kidney beans, peas, basil, oregano, salt, and pepper to the crockpot.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. About 15 minutes before serving, add the tortellini and spinach to the soup.
  6. Serve hot.
