A delicious and refreshing chicken pesto pasta salad with turkey bacon that makes for a perfect meal.

Ingredients

  • 8 ounces rotini pasta
  • 2 cups cooked chicken, diced
  • 1 cup pesto
  • 1 cup cherry tomatoes, halved
  • 1 cup turkey bacon, crumbled
  • 1/2 cup mozzarella cheese, diced
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup pine nuts, toasted
  • salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine the cooked pasta, diced chicken, pesto, cherry tomatoes, turkey bacon, mozzarella, parmesan, and pine nuts.
  3. Season with salt and pepper to taste, and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a vegetarian option, omit the turkey bacon and chicken.
  • Feel free to add any vegetables you like.
