- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14 oz) crushed tomatoes
- 2 cups ricotta cheese
- 2 cups pasta, uncooked lasagna noodles, broken into pieces
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese
- In a large pot, cook the turkey bacon over medium heat until crisp. Remove and chop.
- In the same pot, add onion and garlic, sauté until softened.
- Add chicken ham and cook for 2 more minutes.
- Pour in the chicken broth and crushed tomatoes, bring to a boil.
- Add broken lasagna noodles, Italian seasoning, salt, and pepper. Reduce heat and simmer for 10 minutes.
- Stir in ricotta cheese and half of the mozzarella, cook until melted.
- Garnish with remaining mozzarella and chopped turkey bacon before serving.
Notes
- This soup can be made ahead and reheated.
- Feel free to add more vegetables like spinach or bell peppers.
