A comforting and creamy lasagna soup made with turkey bacon and chicken ham, perfect for a cozy dinner.

Ingredients

  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14 oz) crushed tomatoes
  • 2 cups ricotta cheese
  • 2 cups pasta, uncooked lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and chop.
  2. In the same pot, add onion and garlic, sauté until softened.
  3. Add chicken ham and cook for 2 more minutes.
  4. Pour in the chicken broth and crushed tomatoes, bring to a boil.
  5. Add broken lasagna noodles, Italian seasoning, salt, and pepper. Reduce heat and simmer for 10 minutes.
  6. Stir in ricotta cheese and half of the mozzarella, cook until melted.
  7. Garnish with remaining mozzarella and chopped turkey bacon before serving.

Notes

  • This soup can be made ahead and reheated.
  • Feel free to add more vegetables like spinach or bell peppers.
