Easy Stuffed Bell Peppers are a delicious and healthy dish made with turkey bacon, perfect for a quick weeknight meal.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 8 ounces turkey bacon, chopped
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy, then add ground turkey and cook until no longer pink.
  4. Stir in cooked rice, diced tomatoes, Italian seasoning, and garlic powder; mix well.
  5. Stuff the mixture into each bell pepper and top with shredded cheese.
  6. Place peppers upright in a baking dish, cover with foil, and bake for 25 minutes.
  7. Remove foil and bake for an additional 10 minutes or until cheese is bubbly.
  8. Serve hot.

Notes

  • For added flavor, try adding chopped onions and garlic to the turkey mixture.
  • These peppers can be made ahead and frozen for later use.
