  • 1 can (14 ounces) coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 cups mixed vegetables (bell peppers, snap peas, etc.)
  • 2 tablespoons vegetable oil
  • 1 handful fresh basil
  • 1 lime, juiced

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the sliced chicken and cook until browned.
  3. Stir in the red curry paste and cook for 1 minute.
  4. Add the coconut milk, fish sauce, and brown sugar; stir until well combined.
  5. Bring to a simmer and add the mixed vegetables.
  6. Cook for an additional 5-7 minutes until the vegetables are tender.
  7. Stir in the fresh basil and lime juice before serving.
