  • 4 cups onions, thinly sliced
  • 4 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 8 cups beef broth
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste
  • 8 slices of French bread
  • 2 cups Gruyere cheese, shredded

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add the onions and sauté until caramelized, about 25 minutes.
  3. Stir in flour and cook for 2 more minutes.
  4. Add beef broth and thyme, and bring to a simmer.
  5. Season with salt and pepper.
  6. While the soup simmers, toast the French bread slices.
  7. Top each slice with cheese and place under the broiler until melted.
  8. Serve the soup hot, topped with cheesy toast.
