- 1 loaf French baguette
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 ripe avocado
- 1 tablespoon lime juice
- Salt to taste
- Black pepper to taste
- 2 tablespoons fresh cilantro, chopped
- Preheat the oven to 400°F (200°C).
- Slice the baguette into 1/2-inch slices and arrange them on a baking sheet.
- Brush the slices with olive oil and bake for 5-7 minutes until golden brown.
- In a skillet, heat the remaining olive oil over medium heat.
- Add the garlic and sauté until fragrant, about 1 minute.
- Add the shrimp, season with salt and pepper, and cook until pink, about 3-4 minutes.
- In a bowl, mash the avocado and stir in lime juice, salt, and cilantro.
- Spread the avocado mixture on each crostini and top with garlic shrimp.
- Garnish with additional cilantro and serve immediately.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the shrimp while cooking.
- To make ahead, prepare the avocado mixture and shrimp separately, then assemble just before serving.
