A delightful appetizer featuring succulent garlic shrimp paired with creamy avocado on crispy crostini.

Ingredients

  • 1 loaf French baguette
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette into 1/2-inch slices and arrange them on a baking sheet.
  3. Brush the slices with olive oil and bake for 5-7 minutes until golden brown.
  4. In a skillet, heat the remaining olive oil over medium heat.
  5. Add the garlic and sauté until fragrant, about 1 minute.
  6. Add the shrimp, season with salt and pepper, and cook until pink, about 3-4 minutes.
  7. In a bowl, mash the avocado and stir in lime juice, salt, and cilantro.
  8. Spread the avocado mixture on each crostini and top with garlic shrimp.
  9. Garnish with additional cilantro and serve immediately.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the shrimp while cooking.
  • To make ahead, prepare the avocado mixture and shrimp separately, then assemble just before serving.
