- 1 loaf French baguette
- 2 tablespoons olive oil
- 1 pound shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 ripe avocado, mashed
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Slice the baguette into ½ inch pieces and brush each side with olive oil. Place on a baking sheet and bake for 5-7 minutes or until golden brown.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.
- Add shrimp to the skillet, season with salt and pepper, and cook until pink, about 2-3 minutes per side.
- In a bowl, mix mashed avocado with lemon juice, salt, and chopped parsley.
- Spread the avocado mixture on toasted baguette slices and top with sautéed shrimp.
Notes
- For extra flavor, add a pinch of red pepper flakes to the shrimp.
- Can be served warm or at room temperature.
