Delicious crostini topped with garlic shrimp and creamy avocado.

Ingredients

  • 1 loaf French baguette
  • 2 tablespoons olive oil
  • 1 pound shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 ripe avocado, mashed
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette into ½ inch pieces and brush each side with olive oil. Place on a baking sheet and bake for 5-7 minutes or until golden brown.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.
  4. Add shrimp to the skillet, season with salt and pepper, and cook until pink, about 2-3 minutes per side.
  5. In a bowl, mix mashed avocado with lemon juice, salt, and chopped parsley.
  6. Spread the avocado mixture on toasted baguette slices and top with sautéed shrimp.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the shrimp.
  • Can be served warm or at room temperature.
