  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a pot, heat olive oil over medium heat.
  2. Add rice and sauté for 2-3 minutes until golden.
  3. Pour in vegetable broth, lemon juice, salt, and pepper.
  4. Bring to a boil, then cover and reduce heat to low.
  5. Simmer for 15-20 minutes until rice is cooked and liquid is absorbed.
  6. Fluff rice with a fork and stir in lemon zest and parsley before serving.
