A warming, delightful twist on traditional lasagna that combines all the flavors into a comforting soup.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 12 ounces lasagna noodles, broken
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef and onion, cooking until browned.
  2. Add garlic and cook for another minute.
  3. Stir in crushed tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for about 20 minutes.
  5. Add broken lasagna noodles and cook until tender.
  6. Remove from heat and stir in ricotta cheese until well combined.
  7. Serve topped with mozzarella and Parmesan cheese.

Notes

  • For a spicier version, add red pepper flakes.
  • Can substitute ground turkey for a lighter option.
