  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup green beans, trimmed
  • 1 cup small pasta (like ditalini)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add olive oil, onion, carrots, and celery. Sauté until the vegetables are tender.
  3. Add garlic and cook for 1 more minute.
  4. Pour in the vegetable broth and add the diced tomatoes, green beans, and seasonings.
  5. Bring the soup to a boil, then stir in the pasta.
  6. Simmer until pasta is cooked, about 10 minutes.
  7. Finally, stir in the spinach and crumble the cooked turkey bacon on top.
  8. Serve hot and enjoy!
