A comforting and delicious soup made in your Instant Pot, featuring turkey bacon and cheesy goodness.

Ingredients

  • 8 ounces turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Set the Instant Pot to sauté mode and add the olive oil.
  2. Cook the turkey bacon until crispy, then remove and crumble.
  3. Add the onion and garlic, sauté until the onion is translucent.
  4. Pour in the chicken broth, corn, diced tomatoes, chili powder, and cumin. Stir to combine.
  5. Close the lid and set to high pressure for 10 minutes.
  6. Once done, release the pressure and stir in the heavy cream and cheddar cheese until melted.
  7. Add the crumbled turkey bacon back into the pot, season with salt and pepper, and garnish with cilantro before serving.

Notes

  • For a spicier soup, add diced jalapeños or a pinch of cayenne pepper.
  • This soup can be made ahead of time and reheated.
