- 8 ounces turkey bacon
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can corn, drained
- 1 can diced tomatoes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt to taste
- Pepper to taste
- 1 tablespoon fresh cilantro, chopped
- Set the Instant Pot to sauté mode and add the olive oil.
- Cook the turkey bacon until crispy, then remove and crumble.
- Add the onion and garlic, sauté until the onion is translucent.
- Pour in the chicken broth, corn, diced tomatoes, chili powder, and cumin. Stir to combine.
- Close the lid and set to high pressure for 10 minutes.
- Once done, release the pressure and stir in the heavy cream and cheddar cheese until melted.
- Add the crumbled turkey bacon back into the pot, season with salt and pepper, and garnish with cilantro before serving.
Notes
- For a spicier soup, add diced jalapeños or a pinch of cayenne pepper.
- This soup can be made ahead of time and reheated.
