- 1 pound Italian sausage
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 2 cups kale, chopped
- 1 can (15 ounces) cannellini beans, drained and rinsed
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat.
- Add the Italian sausage and cook until browned.
- Stir in the onion, carrots, and celery; cook until softened.
- Add garlic and cook for 1 minute more.
- Pour in the chicken broth, diced tomatoes, basil, oregano, and red pepper flakes.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add kale and cannellini beans; cook until the kale is wilted.
- Season with salt and pepper to taste.
