Ingredients

  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 2 cups kale, chopped
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the Italian sausage and cook until browned.
  3. Stir in the onion, carrots, and celery; cook until softened.
  4. Add garlic and cook for 1 minute more.
  5. Pour in the chicken broth, diced tomatoes, basil, oregano, and red pepper flakes.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Add kale and cannellini beans; cook until the kale is wilted.
  8. Season with salt and pepper to taste.
