  • 8 ounces pasta
  • 1 pound asparagus, trimmed
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 lemon, zested and juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a large pot, bring salted water to a boil and blanch the asparagus for 2-3 minutes until bright green and tender-crisp.
  3. Remove the asparagus and immediately plunge into ice water to stop cooking.
  4. In a large skillet, heat olive oil over medium heat, add garlic and sauté until fragrant.
  5. Add the cooked pasta, asparagus, lemon zest, lemon juice, salt, and pepper to the skillet; toss to combine.
  6. Serve topped with Parmesan cheese and parsley.
