  • 2 tablespoons lemon zest
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix flour, baking powder, baking soda, and salt together.
  3. In another bowl, cream the butter and sugar together until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla, lemon juice, and lemon zest.
  5. Gradually add dry ingredients to the wet mixture, mixing until combined.
  6. Gently fold in the blueberries.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
