  • 2 cups all-purpose flour

  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon juice.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the grated zucchini and lemon zest.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
