  • 4 slices turkey bacon
  • 2 ounces chicken ham
  • 4 eggs
  • 1 cup corn tortillas, cut into strips
  • 1/2 cup onion, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup cheese, shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add diced onion and bell pepper, sauté until softened.
  3. Add turkey bacon and chicken ham, cook until browned.
  4. Stir in the corn tortilla strips and cook until they’re slightly crispy.
  5. Beat the eggs and pour them into the skillet, mixing thoroughly.
  6. Cook until the eggs are set and add shredded cheese before serving.

Notes

  • For a spicier version, add jalapeños or hot sauce.
  • Can substitute with any type of cheese you prefer.
