- 4 slices turkey bacon
- 1 pound Italian sausage
- 4 cups chicken broth
- 2 cups kale, chopped
- 1 large potato, diced
- 1 cup heavy cream
- 1 teaspoon garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add the Italian sausage and cook until browned.
- Add the chicken broth, diced potatoes, garlic, onion powder, and red pepper flakes to the pot. Bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in the kale and heavy cream, and simmer for another 5 minutes.
- Chop the cooked turkey bacon and stir it back into the soup.
- Season with salt and pepper to taste before serving.
