- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups mixed vegetables (carrots, celery, bell peppers)
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup corn (fresh or frozen)
- 1 cup spinach, chopped
- In a large pot, heat olive oil over medium heat.
- Add the diced onion and sauté until translucent.
- Add the minced garlic and cook for another minute.
- Stir in the mixed vegetables and cook for 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the heavy cream, thyme, salt, and pepper; reduce heat and simmer for 10 minutes.
- Add the corn and spinach; cook until heated through.
- Serve warm.
