A warm and hearty one-pot creamy vegetable soup that’s easy to make and full of flavor.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups mixed vegetables (carrots, celery, bell peppers)
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup corn (fresh or frozen)
  • 1 cup spinach, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the mixed vegetables and cook for 5 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add the heavy cream, thyme, salt, and pepper; reduce heat and simmer for 10 minutes.
  7. Add the corn and spinach; cook until heated through.
  8. Serve warm.
