  • 1 cup orange juice
  • 1/2 cup vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the orange juice, vegetable oil, eggs, and orange zest.
  4. Combine the wet and dry ingredients until just mixed.
  5. Pour the batter into muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Let cool before serving.
