Delight in these beautiful orange muffins that are not only easy to make but also a perfect breakfast choice!

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon grated orange zest
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and orange zest.
  3. In another bowl, combine the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill each muffin liner about 2/3 full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a richer flavor, substitute half of the milk with orange juice.
  • These muffins can also be topped with a light orange glaze for added sweetness.
