A deliciously nutritious twist on a classic salad featuring kale, Parmesan cheese, and tahini.

Ingredients

Scale
  • 1 bunch kale, stems removed and chopped
  • 1/2 cup tahini
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt to taste
  • 1/4 teaspoon black pepper
  • 1/4 cup water, to thin the dressing

Instructions

  1. In a bowl, whisk together tahini, lemon juice, garlic, salt, pepper, and water until smooth.
  2. In a large mixing bowl, add chopped kale and drizzle with tahini dressing.
  3. Massage the dressing into the kale for a couple of minutes until it softens.
  4. Sprinkle grated Parmesan cheese over the salad and toss to combine.
  5. Serve immediately or let it sit for 10 minutes for flavors to meld.

Notes

  • For a vegan version, omit the Parmesan or use a vegan substitute.
