  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add in the eggs, buttermilk, lemon zest, and lemon juice, mixing well.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop the batter into the prepared muffin tins, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.
