A delicious and comforting roasted tomato basil soup with a twist of turkey bacon.

Ingredients

  • 2 pounds ripe tomatoes
  • 1 cup fresh basil leaves
  • 4 slices turkey bacon
  • 1 medium onion
  • 4 cloves garlic
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet.
  3. Chop the turkey bacon, onion, and garlic; sprinkle over the tomatoes.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Roast in the oven for 30 minutes.
  6. Remove the baking sheet and let cool for a few minutes.
  7. In a large pot, combine roasted vegetables and broth; bring to a simmer.
  8. Add basil leaves and cook for an additional 5 minutes.
  9. Use an immersion blender to puree the soup until smooth.
  10. Serve warm.

Notes

  • For a richer flavor, add a splash of cream before serving.
