- 2 pounds ripe tomatoes
- 1 cup fresh basil leaves
- 4 slices turkey bacon
- 1 medium onion
- 4 cloves garlic
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 400°F (200°C).
- Cut the tomatoes in half and place them on a baking sheet.
- Chop the turkey bacon, onion, and garlic; sprinkle over the tomatoes.
- Drizzle with olive oil and season with salt and pepper.
- Roast in the oven for 30 minutes.
- Remove the baking sheet and let cool for a few minutes.
- In a large pot, combine roasted vegetables and broth; bring to a simmer.
- Add basil leaves and cook for an additional 5 minutes.
- Use an immersion blender to puree the soup until smooth.
- Serve warm.
