  • 2 pounds ripe tomatoes
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 slices turkey bacon
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup heavy cream (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the tomatoes and place them on a baking sheet.
  3. Add the chopped onion and minced garlic to the baking sheet.
  4. Put the turkey bacon on top of the tomatoes, onion, and garlic.
  5. Drizzle with olive oil, salt, and pepper.
  6. Roast for 25-30 minutes until the tomatoes are soft and caramelized.
  7. Remove from the oven and let cool slightly.
  8. Transfer the roasted vegetables and bacon to a pot.
  9. Add the vegetable broth and basil.
  10. Blend until smooth.
  11. Simmer on low heat and stir in the cream if using.
  12. Serve hot, garnished with fresh basil or a drizzle of cream.

Notes

  • For a vegan version, omit the turkey bacon and heavy cream.
  • Serve with grilled cheese for a classic combination.
