  • 2 cups mixed vegetables (zucchini, bell peppers, red onion)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the mixed vegetables with olive oil, garlic powder, oregano, salt, and pepper. Toss to coat.
  3. Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender.
  4. Meanwhile, cook the orzo according to package instructions.
  5. Once the orzo is cooked, add it to the roasted vegetables and mix well.
